Veal Saltimbocca

8 very thin slices veal
8 very thin slices ham
8 fresh sage leaves (or 1/2 tsp dried sage)
Pepper to taste
2 oz butter
1 wineglass white wine

Lay out the slices of veal and lay a slice of ham on top of each
one. Place a sage leaf, or sprinkle dried sage, over each slice.
Sprinkle with pepper. Roll up the slices and hold with cocktail
sticks. Heat the butter in a frying pan. Add the veal rolls and
fry until browned. Add the wine to the pan, bring to the boil then
lower the heat. Cover the pan and simmer for around 10 minutes.
Remove the cocktail sticks and serve coated with the juices from
the pan.
