Sweet Sour Brisket 02

Sweet and Sour Brisket serves 8
5 to 6 lb brisket of beef 2 large onions sliced 1 large garlic clove minced 3/4 cup dark brown sugar 1/2 cup white vinegar 1 cup catsup 1 cup water 2 tsp salt fresh pepper to taste
In a heavy duty skillet heated with cooking oil, brown brisket on all sides. Add onion, garlic and cook to soften. Add remaining ingredients and cook covered on low heat until brisket is fork tender, about 2 1/2 to 3 hours. For best flavor and serving let brisket cool, chill and cut brisket the following day and reheat gently with the sauce.
