Cachaca (Brazilian spirits) cocktail

2 tablespoons sugar
2 fresh limes, finely grated and squeezed
1 cup cachaca or white rum
1 cup crushed ice

In a small bowl, combine the sugar, grated lime peel and lime juice.
Let stand for 5 minutes. Add the cacha\xe7a. Pour the cocktail
mixture into small glasses filled with ice. Serves 4.

This from a Brasilian household and someone who imports Cachaca (also known as Pinga...) The trick is to start by wedging a lime. Put the lime and sugar into a "morter and pestal" set. Crush the lime and sugar mixture until the sugar dissolves and you have forced the lime essence, as well as the lime pulp and juice, into this mixture. Then....and only then, put the lime-sugar mix into a larger glass server, add "large size" crushed ice and your Cachaca (spirits). Mix well. Garnish your serving glass with lime. Now there, you have the proper drink.
