Vinaigrette Sauce

Vinaigrette sauce (molho de vinagrete)
1/2 cup olive oil 1 cup white vinegar 1 teaspoon salt 1 cup Italian parsley, finely chopped 4 large fresh tomatoes, chopped 1 large yellow onion, finely chopped 2 fresh red cayenne peppers, finely chopped (optional)
Combine all the ingredients in a large bowl. Stir well and serve either at room temperature or cold. Serve over meat and beans. Makes 3 cups.
