Light Oatmeal Bread

1 1/2 POUND LOAF

3/4 cup rolled oats
1 1/4 cups water
2 tablespoons unsweetened applesauce
2 tablespoons brown sugar
1 teaspoon salt
2 3/4 cups bread flour
2 teaspoons active dry yeast

2 POUND LOAF

1 cup rolled oats
1 1/2 cups water
3 tablespoons unsweetened applesauce
3 tablespoons brown sugar
2 teaspoons salt
3 1/2 cups bread flour
2 1/2 teaspoons active dry yeast

Place all ingredients in bread pan. Select Basic cycle. Observe
the dough as it kneads. After 5-10 minutes, if it appears dry
and stiff or if your machine sounds as if it's straining to kn ead
it, add more water 1 tablespoon at a time until the dough forms a
smooth, soft, pliable ball that is slightly tacky to the touch.
After the baking cycle ends, remove bread from the pan and place
on a cake rack to cool for 1 hour befo re slicing.
