Potato Bread (makes two pound loaf)
1 1/3 cups water 1/4 cup margarine 2 eggs 4 cups bread flour 1 cup instant mashed potato mix (dry) 1 tbsp. sugar 2 tsp. salt 1 1/4 tsp. bread machine yeast
I use the dough only cycle and form my bread into whatever shape I desire and let rise in my prepped oven (the way I prepare my oven is I place about 2 cups of boiled water in a container and set inside a preheated my oven which has a warm setting. I turn off the oven and let the door stand ajar for a few minutes and then place my bread into rise for 20-30 minutes). After the bread has risen, I remove the water and bread and preheat the oven to 375 - 400 degrees. I then bake until golden brown.
Also, there is a variation to this recipe if you like Tarragon -- just add 2 teaspoons of dried tarragon leaves to the dough mixture above.
