Apple Raisin Bran Muffins 1 1/2 cup shreds of wheat bran cereal 1 cup skim milk 1/4 cup margarine, melted 1/2 cup honey 1 large cooking apple, peeled, cored and grated (1 1/2 cups) 3/4 cup raisins 1 large egg, well beaten 1 teaspoon cinnamon 1 1/4 cups flour 2 teaspoons baking powder 1/2 teaspoon baking soda Heat oven to 400 degrees. Lightly grease 12 muffin cups. In a large bowl, soak cereal in milk for 5 minutes. Stir in margarine, honey, apple, raisins, egg and cinnamon. In another bowl combine remaining ingredients. With a rubber spatula, fold flour into apple bran mixture just enough to moisten. Do not over mix. Evenly distribute among muffin cups. Bake 20 minutes or until done.
