APPLE DATE MUFFINS

2 1/4 cups whole wheat flour
1 1/2 teaspoons baking soda
1/3 cup brown sugar, packed
3/4 cup buttermilk, nonfat
1 1/2 cups apples, finely chopped
3 tablespoons liquid egg substitute
1 teaspoon vanilla extract
1/2 cup chopped dates

Preheat oven to 350 degrees; coat muffin cups with nonstick cooking
spray. Combine the flour, baking soda and brown sugar; stir to
mix well. Add the buttermilk, apples, egg substitute and vanilla
extract; stir just until the dry ingredients are moistened. Fold
in the dates. Fill the muffin cups 3/4 full with the batter. Bake
for 16 to 18 minutes, or just until a toothpick inserted in the
center comes out clean. Remove the muffin tin from the oven and
allow it to sit for 5 minutes before removing the muffins. Serve
warm or at room temperature.
