APPLE RAISIN MUFFINS
1 1/2 cups apples, peeled, cored and chopped
1 cup raisins
2 Tbsp sherry
1/2 cup sugar
3/4 cup cream
1/2 cup softened margarine
2 tsp mixed spice
2 eggs
2 cups flour
3 tsp baking powder
Preheat oven to 400F, prepare pans. Put the first three ingredients
into a bowl and set aside. Put the next three ingredients into
another bowl and mix well. Add the remaining ingredients plus the
apple mixture and blend until just combined. Spoon into pans and
bake for 15-20 minutes. Makes 15.
