In bowl, combine biscuit mix and bacon. Add milk and egg, stirring just until moistened. Spoon 1/2 of the batter into pans, press a cheese cube into each and top with remaining batter, covering cheese completely. Bake for 25 mins or until golden. Serve hot. Makes 12.
