Banana Walnut Muffins

2 cups flour
1 tablespoon baking powder
1 teaspoon salt
3 large eggs
2/3 cup milk
6 tablespoons margarine, melted
1/2 cup firmly packed brown sugar
1/2 teaspoon vanilla
1 1/2 cups mashed bananas (2 to 3 ripe bananas)
1/3 cup chopped walnuts

Preheat oven to 400 degrees. Sift together flour, baking powder,
and salt. Set aside. Combine eggs, milk, and melted margarine in
a bowl. Mix well, then beat in the brown sugar and vanilla. Add
dry ingredients and mix slightly. Stir in bananas and nuts.
Combine, but do not overmix; the batter should be lumpy. Divide
among lined cupcake tins. Bake for 20 to 25 minutes or until
toothpick comes out clean.
