You will need:
125g chopped butter, 3/4 cup brown sugar, 1/4 cup golden syrup, 2 cups standard grade flour, 2 teaspoons baking powder, 1 teaspoon ground ginger, 1 teaspoon cinnamon, 2 eggs, lightly beaten, 1 cup mashed ripe banana, 1/2 chopped walnuts (optional)
What to do:
To a saucepan add butter, brown sugar and golden syrup. Stir over a low heat until butter has melted. Cool for 5-10 mins.
Sift flour, baking powder. ginger and cinnamon into a bowl. Make a well in the centre.
Add cooled butter mixture, eggs, banana and walnuts. Mix lightly until smooth.
Transfer mixture to a greased 23cm x 13cm loaf tin with the base lined with baking paper.
Bake at 180 degrees celcius for 40-45 mins or until a skewer inserted in the middle of the loaf comes out clean.
Srand for 5 minutes before turning onto a wire rack to cool. Cut into slices and serve with butter.
