BLUE CHEESE MUFFINS

3 1/2 ozs crumbled blue cheese
1 cup finely sliced spring onions
2 eggs
1/2 cup milk
2 tsp horseradish sauce or 1/2 tsp chilli sauce
2 Tbsps oil
1/2 tsp salt
dash black pepper

1/2 cup self-raising flour
1 cup rye flour
1 tsp baking powder

Preheat oven to 400F, grease pans. Thoroughly combine the wet mix
ingredients. Add the dry mix and stir until the ingredients are
just combined. Transfer the mixture to the prepared pans and bake
for 20-25 mins. Makes 10-12.

Serve with soups such as pumpkin, potato, zucchini or spinach.

Variations:

Omit the self-raising flour and add 1 1/2 tsp of baking powder and
1/2 cup additional rye flour.

Walnut: Add 1/2 cup chopped walnuts to the wet mix.
