Bostonian Blueberry Muffins
1 cup white flour 1 cup whole wheat flour 1/2 cup sugar 1 tbsp. baking powder 1/2 tsp. salt 1/2 tsp. cinnamon 2 cup fresh blueberries, washed, patted dry 1/4 cup melted butter 1/2 cup milk 2 eggs, slightly beaten 1/2 tsp. vanilla
Mix all ingredients in a large bowl, folding in blueberries last so as not to crush them. Pour into greased and floured muffin tins and bake at 425 degrees F. for 15 minutes.
Yield: 12 large muffins
Note: I like to add more cinnamon to give the muffins more zing. Season to your own taste.
