Big Batch Bran Muffins
5 c all purpose flour
5 1/2 c 100% pure bran cereal
2 c packed brown sugar
1 c raisins, dates or blueberries
1 T baking soda
1 T cinnamon
4 c buttermilk
1 c vegetable oil
Preheat oven to 350 F and line 24 muffin cups. In a large bowl
combine flour, bran cereal, brown sugar, raisins, baking soda and
cinnamon, set aside. In another bowl mix together butter milk,
oil and eggs. Stir into dry ingredients until moistened. Spoon
batter into muffin cups, filling to top.
Bake for 25 - 30 mins. Remove muffins to cool on a wire rack and
store in a airtight container.
