Bran Muffins

3 cups bran, soaked in 1 cup boiling water
1/2 cup honey or maple syrup
1/2 cup blackstrap molasses
2 cups buttermilk
2 eggs (optional)
1/2 cup sunflower or safflower oil
3 cups whole-wheat flour or 1 1/2 cups unbleached white flour
and 1 1/2 cups whole-wheat pastry flour
2 1/2 teaspoons baking soda
1/2 teaspoon sea salt (optional)
1 cup presoaked raisins (optional)

Soak bran in boiling water. Combine honey, molasses, buttermilk,
eggs and oil. Add to bran. Combine flour and soda. Mix well. Add
to bran mixture. Stir in presoaked raisins. Bake 25 minutes at 350
degrees. These muffins are delicious served hot with butter, and
they freeze beautifully. Yields 18 bran muffins.

Notes: Water may be substituted for buttermilk. The resulting
muffin, especially if you also omit the eggs will be smaller and
denser.

Fresh or frozen blueberries may be substituted for raisins
