Cappuccino Muffins

2 cups all-purpose flour
1 tbsp baking powder
1/2 tsp baking soda
2 tbsp instant espresso powder
1/2 tsp cinnamon
1/4 tsp salt
1 egg (or 2 egg whites)
2/3 cup granulated sugar
1/4 cup vegetable oil
1 cup buttermilk (or low-fat yogurt)

1/3 cup brown sugar
1 tbsp cocoa
1 tsp instant espresso powder
1/4 tsp cinnamon

Preheat oven to 375F/190C. In bowl, combine flour, baking powder,
baking soda, espresso powder, cinnamon and salt. Mix well.

In large bowl, beat egg with granulated sugar, oil and buttermilk.

Add dry ingredients to large bowl and stir just until combined.

To make topping, in small bowl, combine brown sugar, cocoa, espresso
powder and cinnamon.

Spoon half of batter into 12 medium non-stick, lightly oiled or
paper-lined muffin cups. Sprinkle with half of topping mixture.
Top with remaining batter and sprinkle with remaining topping.

Bake for 20-25 minutes.
