Spicy Carrot Muffins

1 c all-purpose flour
1 cup oatbran cereal (uncooked)
2 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1 cup brown sugar
1 1/2 finely shredded carrots

2 large tart apples, peeled, cored and shredded
1 cup chopped pecans
1/4 cup vegetable oil
1/2 cup skim milk
4 egg whites, lightly beaten
1 tsp vanilla

Heat oven to 375 degrees F. Combine flour, oatbran cereal, baking
soda, baking powder, salt and cinnamon in large bowl. Stir in
sugar. Add carrots, apples and pecans; mix together. Make a well
in the center of the mixture: add the vegetable oil, milk, egg
whites and vanilla. Stir until just moistened.

Line muffin pan with medium sized paper cups, fill 3/4 full for
regular muffins and bake 20-25 minutes or until done. Yield 18.
For large muffins fill cups full and bake up to 25 mins. Yield 12.
