CARROT MUFFINS or mini CARROT LOAF

1/2 cup vegetable oil
2 eggs
1 cup sugar
3 carrots, grated
1 1/3 cups flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
3/4 tsp nutmeg or allspice
1/4 tsp ginger
1 cup raisins, soaked for 10 minutes, drained

Beat oil, eggs and sugar until blended. Stir in finely grated
carrots.

In another bowl combine flour, baking powder, baking soda, cinnamon,
nutmeg, and ginger.

Pour liquids and carrot/raisins into dry ingredients. Stir only to
moisten the batter. Scoop into muffin tins. Bake in a 350 F oven
for 15 to 20 minutes.

I bought some of those miniature loaf tins at Christmastime. The
last time I made this muffin batter I poured it into the mini-loaf
tins and baked them in a 350 F oven for 20 to 25 minutes. This
made six mini carrot loaves.
