Cocoa Branana Muffins
Yield: 6 large or 12 standard muffins.

1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons cocoa powder
1/2 cup sugar
1 1/2 cups Kellogg's All-Bran cereal
3/4 cup skim milk
2 egg whites
2 tablespoons vegetable oil
1 cup sliced ripe banana, about 1 medium

Stir together flour, baking powder, salt, cocoa powder, and sugar.
Set aside.

Measure cereal and milk into large mixing bowl. Stir to combine.
Let stand 2 minutes or until cereal has softened. Add egg whites
and oil. Beat well. Stir in banana. Add flour mixture, stirring
only until combined. Portion batter evenly into 6 greased 3 1/4
x 1 1/4 inch (or 12 2 1/2 inch) muffin tins.

Bake at 400 F about 30 minutes (25 minutes for standard size muffins)
or until lightly browned.
