COFFEE STREUSEL MUFFINS

Wet Mix

1/4 cup butter
1/2 cup brown sugar
2 eggs
1 1/2 cups plain yoghurt

Dry Mix

3 cups self-raising flour
1/2 tsp cinnamon
1/2 cup walnuts
1/2 cup sultanas (optional)

Topping

1 Tbsp brown sugar
1 Tbsp margarine
1 tsp cinnamon
2 Tbsp walnuts

Preheat oven to 400 F, prepare pans. Blend the butter and sugar
and beat in the eggs and yoghurt. Fold the previously combined dry
mix into the wet mix and place into pans. Blend the topping
ingredients together and place this on the top of the muffins,
pressing it slightly into the batter to help it stick. Bake for 20
mins. Makes 15. These muffins are lovely served with honey.
