Corn Muffins

1 1/4 cup unbleached all purpose flour
3/4 cup fine ground yellow cornmeal
2/3 cup sugar
2 tsps baking powder
1/2 tsp baking soda
1 cup milk
2 lg eggs
1/3 cup corn oil

Preheat oven to 400 deg F. Prepare a muffin tin (grease and flour,
or line with cups.) Mix together all dry ingredients in a small
bowl. Set aside. In a separate bowl, mix together all wet
ingredients until homogeneous. Add all dry ingredients at once to
the wet, mix until just barely moistened. Mixture will still be
lumpy. Spoon batter into muffin pan until it is nearly level with
the edge of the pan. Bake for 20 minutes or until crowns are golden
brown, cake tester comes out dry, etc. Makes 11 or so muffins.
