CORNMEAL HAM MUFFINS
1/4 cup milk
1/4 cup oil
1 cup yoghurt
2 eggs
1 cup chopped cooked ham
2 1/2 tsp baking powder
3 tsp dry mustard
1/2 cup coarse cornmeal
1 cup flour
Preheat oven to 375F, prepare pans. Put the first five ingredients
into a bowl and mix well. Mix remaining ingredients, add to wet
mix until just combined. Spoon into pans and bake for 15-20 mins.
Makes 12.
