CORNMEAL MUFFINS
1 cup flour
1 Tbsp baking powder
1/2 tsp salt
1/2 cup white sugar
1 cup cornmeal
1/2 cup butter or margarine
1 egg
3/4 cup milk
Preheat oven to 375F, prepare pans. Mix dry ingredients together
and stir in cornmeal. Melt butter, add egg and milk and combine
well. Add dry mix to wet mix until just combined. Spoon into pans
and bake for 15-20 mins.
Variation: Add 1/2 cup corn niblets or 1/2 cup crumbled cooked
bacon.
