JAM and COCONUT MUFFINS

2 1/2 cups flour
3 tsp baking powder
1/2 heaped cup caster sugar
1 egg
1 1/4 cups coconut
1 tsp vanilla essence
1 1/4 cups milk
3 Tbsp jam
6 Tbsp vegetable oil

Preheat oven to 400F, prepare pans. Sift flour and baking powder,
stir in sugar and coconut. Beat egg, vanilla, milk and oil together.
Add dry mix to wet.

mix until just combined. Place a large tablespoon of batter into
each pan, add a teaspoon of jam to each and the rest of the batter.
Sprinkle tops with a little coconut. Bake for 25-30 mins or until
well risen and firm to the touch. Makes 9-10 muffins.
