LEMON SPICED MUFFINS

2 cups flour
4 tsp baking powder
1 1/2 tsp cinnamon
1/2 cup sugar
1 Tbsp grated lemon rind
1/2 cup oil
2 eggs
1/4 cup milk
1 cup unsweetened natural yoghurt

1/4 cup sugar
1 tsp ground cinnamon

Preheat oven to 400F, prepare pans. Sift flour, baking powder and
cinnamon, stir in sugar and lemon rind. Lightly beat the oil, eggs,
yoghurt and milk together. Add dry mix to wet mix until just
combined. Spoon into pans, sprinkle with cinnamon and sugar mixed
together. Bake for 15-20 minutes or until golden and well risen.
Makes 12.
