Oat Bran Muffins
2 cups oat bran
1/2 cup quick oatmeal
1 Tablespoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 teaspoon egg replacer, if desired
1 tablespoon ground flax, if desired
1 egg or egg white (if you didn't use the egg replacer)
2 tablespoons brown sugar
3/4 cup water, skim milk, or milk substitute
2 tablespoons vegetable oil
3/4 cup applesauce, pumpkin or banana
1/4 cup raisins, soaked in hot water for 15 minutes, then drained
chopped nuts (optional)
Mix oat bran, oatmeal, cinnamon, salt, egg replacer and flax. Add:
egg, brown sugar, milk, oil, applesauce, raisins and nuts.
Spoon into a muffin pan, use cupcake papers or spray with cooking
spray. Makes 12. About 150 calories each.
Bake at 375 degrees for 20 to 25 minutes.
