1 c flour
1/4 c granulated sugar
3 t baking powder
1/2 t salt
1 c quick-cooking oatmeal (NOT instant)
1 egg, slightly beaten
1 c milk
3 T vegetable oil
Preheat oven to 425 degrees Fahrenheit. Grease 12 muffin tins with
shortening. Sift together flour, sugar, baking powder, and salt.
Add oatmeal, stir to mix. Mix in egg, milk, and oil, stirring only
to moisten. Fill 12 muffin tins and bake for 15 minutes or until
lightly golden brown on top.
