Orange Applesauce

ORANGE APPLESAUCE MUFFINS
2 cups flour
1+1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp salt
1 egg
1 cup unsweetened applesauce
1 tsp orange zest
1/2 cup orange juice
3 tbl vegetable oil
Preheat oven to 400. Use either paper liners or grease muffin pan
with cooking spray.
Combine dry ingredients and spices.
In a separate bowl, beat egg, add applesauce, orange zest, orange
juice, and oil. Add wet mixture to flour mixture, stir until
moistened. Pour into prepared muffin tin, bake for 20 minutes.
Makes 12 muffins.
