SEARCH RECIPES: LOCATION: Recipes >> Breads Muffins >> Orange Oatmeal    Orange Oatmeal ORANGE OATMEAL MUFFINS 1 cup oats 1/2 cup orange juice 1/2 cup boiling water 1/2 cup butter 1/2 cup brown sugar 1 cup raisins 1 tsp baking powder 1 tsp salt 1/2 cup sugar 2 beaten eggs 1 cup flour 1 tsp baking soda 1 tsp vanilla Soak oats in orange juice and boiling water for 15 minutes. Preheat oven to 375F, prepare pans. Cream butter and sugars, beat in eggs and stir in the oat mixture. Stir in raisins and vanilla. Mix flour, baking powder, baking soda and salt, add to wet mix until just combined. Spoon into pans and bake for 20 mins or until done. Makes 12 muffins. Light and fluffy!! However, did omit the raisins and cut the sugars to 1/3 cup instead of 1/2. Orange juice is sweet on its own. Just try dried cranberries instead of raisins, you are going to have kind of orange cranberries muffins. Simply delicious.
