Classic Colada Muffins

1 1/2 cup whole wheat pastry flour
1 cup whole wheat flour
1/2 cup unbleached white flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp sea salt

3/4 cup apple juice concentrate
1 cup soy or cow's milk
1/4 cup canola oil
2 tsp rum extract

1/4 cup coconut
3/4 cup crushed pineapple (well drained)

1/4 cup additional coconut

Preheat oven to 400 degrees. Measure and sift the fry ingredients
together in a large bowl. Sift a second time. Set aside. Whisk
the wet ingredients in a medium bowl or blend them in a food
processor using. Add the pineapple and coconut to the wet ingredients
and stir to combine. Pour the wet ingredients into the dry
ingredients. Stir until mixed. Do not overstir. Spoon the batter
into greased or papered baking tins. Fill each cup nearly to the
top. Top each muffin with a pinch of coconut. Bake for 15-20
minutes. Cool in the baking tins for at least 10 minutes.
