Pineapple Upside-Down Muffins
1 pkg yellow cake mix
1/3 cup melted butter or margarine
2/3 cup brown sugar
20 oz can crushed pineapple in juice
Mix cake mix according to package. In jumbo muffin tins, place
jumbo muffin cups. Drip 1 Tablespoon of melted margarine into each
cup, 1 heaping Tablespoon of Brown Sugar in each cup, then pour
batter into cups until 3/4 full. Bake at 350 degrees for 20-25
minutes.
Approximately 12 Jumbo Muffins
