POTATO MUFFINS

1 cup mashed potato
1 1/2 cups milk
2 eggs
1/2 cup yoghurt or sour cream
1/2 cup finely chopped spring onions (green onions)

2 1/2 cups self-raising flour
1 tsp salt

Preheat oven to 400F, prepare pans. Blend the potato, milk, egg
and yoghurt/cream. Stir in the chopped onions. Fold the flour and
the salt into the wet mix. Spoon into pans and bake for 20-25 mins.
Makes 12.

Variations:

Ham: Add 1/2 cup finely chopped ham to the wet mix.

Parsley: Add 2 Tbsp chopped fresh parsley to the wet mix.

Apple: Omit the onion and add 1 cup peeled and diced apple.
