Raisin/Apple Bran Muffins

1 Tb white vinegar
1 cup milk
1/2 cup oil
1 egg
1 tsp vanilla
1 cup bran
1/3 cup wheat germ
1 cup brown sugar

3/4 cup whole wheat flour
3/4 cup all purpose flour
2 tsp baking powder
1 tsp baking soda
1 cup finely diced apples
1 cup raisins
1/4 cup molasses

Combine milk and vinegar and set aside to sour. Whisk sugar oil
and egg together until combined. Stir vanilla, bran, wheat germ,
molasses and soured milk. Combine flours, baking powder and soda
in separage bowl. Add apple and raisins, tossing until fruit
coated. Add dry ingredients to creamed mixture. Stir until just
combined and no dry spots remain. Let batter stand for five minutes.
Heap into 12 well greased or paper-lined muffin cups.

Bake for 18-20 minutes. Transfer to wire rack to cool Let stand
in pan 10-15 minutes before removing.
