Raspberry Chocolate Chip Muffins

2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
2/3 cup semisweet mini chocolate chips
2 tablespoons to 1/3 cup butter
3/4 cup sugar
2 large eggs
1 teaspoon vanilla extract
1 tablespoon orange rind, finely grated
1/2 cup skim milk
1/3 bag frozen raspberries

Sift flour with baking powder. Mix in mini chips. Set aside.
With an electric mixer, beat softened butter with sugar until pale
and fluffy. Add eggs, vanilla, and orange zest. Mix in dry
ingredients in two additions, alternating with milk. Fold in
raspberries. Spoon into prepared muffin tin (muffin papers strongly
recommended!) . Bake at 375 for 25-30 minutes. Cool for 10
minutes before unmolding.
