SMOKED SALMON and HERB MUFFINS

3 cups flour
4 tsp baking powder
1 tsp salt
1/2 tsp sugar
3 eggs
1 1/2 cups milk
2 ozs butter
2 ozs smoked salmon slices
1/2 cup chopped mixed fresh herbs (tarragon, chives, parsley, coriander)
Low fat sour cream

Preheat oven to 400F, prepare pans. Sift flour, baking powder and
salt into a mixing bowl. Stir in the sugar and herbs. Beat the eggs
and milk together, melt the butter. Add milk mixture and butter to
the dry ingredients. Mix lightly with a fork. Spoon into pans and
bake for about 12 mins or until golden and well risen. Serve warm
and fill with smoked salmon and sour cream. Makes 12.
