Sprouting Muffins

1 cup wheat flour
1 cup all-purpose flour
4 teaspoons baking powder
1/4 teaspoon salt
1/2 cup sugar
6 tablespoons unsalted butter
3 large eggs
1/3 cup milk
6-ounce package mixed crunchy sprouts, (adzuki, green pea or lentil)

Preheat the oven to 400 degrees. Sift together the flours, baking
powder and salt. Set aside.

In an electric mixer, cream the sugar and butter. Add the eggs on
at a time and continue mixing until incorporated. Pour in the
milk. Add the flour mixture and continue mixing until just
incorporated. Fold in the sprouts.

Divide the mixture evenly in a buttered 12-cup muffin tin, place
in the oven and bake until a toothpick inserted in the center of
a muffin comes out clean, about 18 minutes. Set aside to cool for
5 minutes.

Yield: 12 muffins.
