STRAWBERRY SPECIAL MUFFINS

1/2 cup margarine
1/2 cup sugar
2 eggs
1 cup strawberry yoghurt
1 punnet chopped fresh strawberries (about 1 1/2 cups)
grated rind and juice 1 large lemon

2 1/2 cups self-raising flour

cinnamon or garam masala
sugar

Preheat oven to 350F, prepare pans. Blend the margarine and sugar
and beat in the eggs and yoghurt. Fold in the chopped strawberries,
lemon juice and rind and very carefully fold in the flour to avoid
squashing the fruit. Spoon into pans, sprinkle with spice and sugar
combined if desired and bake for 20-25 mins.

Variations: Any fresh berry fruit may be substituted for the
strawberries (raspberries, blackberries, boysenberries, loganberries,
marionberries, cranberries, blackcurrants, elderberries or
blueberries).
