COFFEE STREUSEL 1/4 cup butter 1/2 cup brown sugar 2 eggs 1.1/2 cups plain yoghurt
3 cups self-raising flour 1/2 tsp cinnamon 1/2 cup walnuts 1/2 cup sultanas (optional)
1 Tbsp brown sugar, 1 Tbsp margarine, 1 tsp cinnamon, 2 Tbsp walnuts Preheat oven to 400F, prepare pans. Blend the butter and sugar and beat in the eggs and yoghurt. Fold the previously combined dry mix into the wet mix and plac e into pans. Blend the topping ingredients together and place this on the top of the muffins, pressing slightly into the batter to help it stick. Bake for 20 mins. Makes 15.
