TANGELO and POPPYSEED MUFFINS

1/2 cup margarine
1/2 cup sugar
2 beaten eggs
2 Tbsp poppyseeds
1/2 cup low-fat milk or yoghurt
1 Tbsp grated tangelo rind
1/2 cup tangelo juice
2 cups flour
2 tsp baking powder

Preheat oven to 400F, prepare pans. Blend the margarine and sugar
together and beat in the eggs, milk or yoghurt, tangelo rind and
juice, and poppyseeds. Mix dry ingredients and add to wet mix until
just combined. Spoon into pans and bake for 20 mins. Makes 12.
