Whole Wheat Muffins

1 cup whole wheat flour
1 cup sifted all-purpose flour
1/2 teaspoon salt
2 1/2 teaspooons baking powder
3 tablespoons sugar
1 egg or egg substitute (or 2 egg whites)
1 cup skim milk
1/2 cup oil

Sift the two kinds of flour together with salt, baking powder and
sugar. Add egg, milk and oil. Stir quickly only until barely
blended. Do not beat. Grease muffin tins lightly with oil, fill
each tin 2/3 fill. Bake at 425 F 20 to 25 minutes. Yield: 12
2-1/4-inch muffins.
