Print this Recipe    Whole wheat-banana pancakes

1 cup all-purpose flour
1 cup whole wheat flour

1 tsp baking soda
1 tsp baking powder
1 tsp salt

3 Tbsp honey
3 Tbsp sugar
1 large egg
3 Tbsp butter, melted

1 cup milk
2 very ripe bananas, mashed

Mix all the dry ingredients, then add the egg, honey, butter, and
milk. Finally, blend in the bananas. Makes about 20 4" pancakes.

Variation: Substitute two apples and a tsp of cinnamon for bananas.

I made this recipe today, but used 2 cups of whole wheat flour instead of a cup of each, and used soy milk. I had to add about another 1/4 to 1/3 of a cup of milk, I believe due to the increased whole wheat flour. The end result was a delicous hearty breakfast. These came out to be very heavy pancakes, but the honey and banana add very nice natural sweetness. If you like typical fluffy pancakes stick to a cup of each flour, but I would make it again with only whole wheat.
