Belgian Waffles 14

Gaufres (Belgium Waffles) 3 cups milk (low fat milk can be substituted) 2 packages of dry yeast 1/2 tsp. sugar 4 cups unbleached white flour (sifted) 4 eggs 2/3 cups melted unsalted butter Pinch of salt Vanilla and orange-flower water or lemon rind for flavoring Powdered sugar Heat the milk until warm. Dissolve the yeast with 3/4 cup of warm milk and sugar. Set aside. Place the sifted flour in a bowl and make a well in the center. Add the eggs, the melted butter, the dissolved yeast, pinch of salt and the flavoring of your choice.
Beat the mixture slowly with a whisk and add the remaining milk. Mix slowly until smooth. Place the mixture to rise for 1 hour in a warm place, until the mixture has doubled. Follow your waffle-maker directions for cooking the waffles. Serve hot with powdered sugar on top.
Serve the Gaufres with fresh strawberries and whipped cream on top, with maple syrup or with store bought chestnut puree (Sweetened). You can serve these waffles for breakfast or as a dessert. In the summertime try the Gaufre" with vanilla ice cream and fresh fruits.
