Fresh Corn Pancakes

1/2 cup flour
2 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon sugar
1/4 teaspoon pepper
2 eggs, separated
1 1/2 cups fresh corn, cut from cob
3/4 cup milk
3 tablespoons melted butter

Mix flour with baking powder, salt, sugar, and pepper in mixing
bowl. Beat egg yolks and mix with corn and milk. Stir into dry
ingredients. Add melted butter.

Wash beaters and beat egg whites until they stand in soft peaks.
Fold into batter. Drop from a tablespoon onto hot greased griddle
to make 2 1/2 inch pancakes. Cook until golden brown, turning once.
Serve as vegetable course with a dollop of sour cream. Makes 3
dozen small pancakes.
