COTTAGE CHEESE PANCAKES
4 eggs
1 cup cottage cheese
1 cup sour cream
1 cup flour
1 tablespoon sugar
1/4 teaspoon salt
Beat eggs. cottage cheese and sour cream. Blend in the dry
ingredients and beat mixture until it resembles thick cream. Drop
mixture by spoonfuls on a hot griddle. Yield: 36 medium-sized
pancakes.
