Strawberry Crepes
2 punnets strawberries
55 g crystal sugar
6 oz cream cheese
75 g icing sugar
8 oz sour cream
2 tablespoons lemon juice
1 teaspoon lemon zest
8 crepes
Slice strawberries. Set a few aside for garnish. Stir together
strawberries and sugar. Refrigerate.
Mix together icing sugar and cream cheese until well combined.
Stir in sour cream, lemon juice and zest. Beat until smooth. Stir
in sliced strawberries. Fill crepes with strawberry mixture.
Garnish with a few strawberry slices.
