1/2 cup wholewheat flour
2 medium eggs
1/2 cup cottage cheese
1/2 cup milk
1 Tbsp. sugar or 1 tsp. honey
1/4 tsp. salt
1/2 tsp. vanilla
1/8 tsp. nutmeg
1/2 tsp. margarine
Blend flour, eggs, cottage cheese, milk, salt, vanilla and nutmeg
well in blender. Spray large fry pan with Pam. Melt margarine in
pan and put 1/4 cup batter in pan. Spread thin with back of spoon.
When top is dry, turn over and cook the other side. Serve with
butter and brown sugar or corn syrup, rolled up.
