Crumpets

1 tsp sugar
1 package active dry yeast
1/4 cup warm water
1/2 cup lukewarm whole milk
1 egg beaten
1 1/2 cups flour
1/4 tsp salt
2 Tbs melted butter

Combine sugar and yeast in a small bowl. Stir in warm water. Let
set 5 - 10 minutes. In mixing bowl beat together milk and egg.
Stir in yeast mixture, then flour, salt, and melted butter. beat
hard until batter is smooth. Cover with damp towel and let rise
until double in bulk (about 1 hour). Stir batter to deflate.
Generously butter crumpet rings or tuna cans and heat additional
butter in skillet or griddle. Spoon about 1 to 2 Tbs of batter
into each ring (enough to cover bottom entirely) As they begin to
brown remove rings and turn crumpets to cook other side. Makes
8 to 15 depending on size of rings.
