Finnish Baked Pancake (Pannukakku or Kropsu) 2 eggs 2 cup milk 1 cup flour 1/2 tsp. salt 1/4 cup butter 1/4 cup sugar 1/2 tsp. vanilla nutmeg for garnish Melt butter in an 8 x 12 pan in hot oven. Break eggs into a bowl. Add milk and vanilla alternately with flour that has been sifted with the salt and sugar. Last, add melted butter from pan. Beat batter only enough to mix batter. (Batter will be thin.) Pour into the sizzling hot pan and bake 40* minutes or until done in a 400 F oven. Cut into squares and serve immediately.
Recipe can be doubled.
Note: Two recipes said 40 minutes at 400F, a third said 25 minutes, noting the batter should be 1/3" deep in the pan. I'd check it at 25 and see if the top has set yet. A clean knife test would be a good guide. I don't make this often but I seem to remember it took longer than I expected to bake.
