Ingredients

Rice flour 2 Cups
Semolina 2 tbsp.
Water 1/2 Cup
Sugar 2 tbsp.
Dry yeast 1/4 tsp.
Ground coconut paste 1 Cup
Salt 1 tsp.

Method

Prepare porridge with semolina and water

Add sugar, yeast, rice flour

Knead well for ten minutes to get soft dough

Keep aside for a few hours to ferment

Add coconut paste, mix well and keep aside for an hour to let the batter froth well

Stir in salt

Heat a heavy iron griddle, grease well with gingelly oil (sesame seed oil)

Ladle on a spoonful of batter, cook a few minutes, and turn over

Arrange on a paper or cloth towel and fold another towel over the pancakes to keep them warm
